    Advance Information*

    Introduction

Mango pulp is a delightful product derived from selected varieties of fresh mango fruit. This golden, rich pulp captures the essence and flavor of fully matured mangoes, ensuring a taste experience that's second to none. The meticulous preparation process involves a series of carefully controlled steps to guarantee the highest quality and retention of flavor and aroma. This product can be utilized in a wide range of applications, from beverages to desserts, making it a versatile ingredient for both industry professionals and home cooks alike.

    Selection of the Finest Mangoes

The journey of mango pulp begins with the careful selection of the best mango varieties. Fully matured mangoes are harvested at the peak of ripeness to ensure maximum sweetness and flavor. These mangoes are swiftly transported to a state-of-the-art fruit processing plant. Upon arrival, they undergo a rigorous inspection and washing process to remove any impurities.

    Controlled Ripening

Selected high-quality mangoes are then transferred to controlled ripening chambers. These chambers are designed to provide the ideal environment for mangoes to ripen evenly and consistently. The controlled conditions ensure that the mangoes develop their full flavor potential and achieve the perfect level of ripeness for processing.

    Cutting and De-Stoning

Once the mangoes are fully ripened, they enter the cutting and de-stoning phase. This step involves the mechanical slicing of the mangoes to separate the flesh from the stones (seeds). The cutting process is executed with precision to minimize waste and maximize the yield of pure mango pulp.

    Washing and Blanching

The freshly cut mango flesh undergoes a thorough washing to ensure cleanliness and safety. Following this, the mango pieces are blanched. Blanching is a heat treatment process that inactivates enzymes and helps preserve the natural color and flavor of the fruit.

    Pulping and De-Seeding

The blanched mango pieces are then pulped using specialized machinery. This process involves breaking down the mango flesh into a smooth, uniform pulp. Any remaining seeds or large particles are removed during this phase to ensure a consistent texture.

    Centrifuging and Homogenization

To achieve the desired consistency and quality, the pulp is passed through centrifuges. Centrifuging separates any remaining solid particles from the liquid components, resulting in a refined product. The pulp is then homogenized to create a uniform texture and prevent separation.

    Concentration (When Required)

In some cases, the mango pulp is concentrated to reduce its water content and intensify the flavor. This concentrated pulp is ideal for applications where a stronger mango flavor is desired, such as in the production of fruit juices and nectars.

    Thermal Processing and Aseptic Filling

The mango pulp undergoes thermal processing to ensure its safety and extend its shelf life. This involves heating the pulp to a specific temperature to eliminate any harmful microorganisms. For aseptic products, the pulp is sterilized and packed in aseptic bags, maintaining sterility throughout the process.

    Alternative Packaging Options

    • Canned Mango Pulp: The refined mango pulp is packed in cans, which are hermetically sealed and subjected to retorting. This process involves heating the sealed cans to sterilize the contents and ensure long-term preservation.
    • Frozen Mango Pulp: For frozen pulp variants, the product is pasteurized and deep-frozen using plate freezers. This method preserves the natural flavor and nutritional value of the mango pulp while extending its shelf life.

    Natural Flavor and Aroma Retention

Throughout the entire preparation process, great care is taken to retain the natural flavor and aroma of the mango fruit. The use of advanced technologies and controlled conditions ensures that the final product closely mirrors the fresh taste of ripe mangoes.
