Ingredients for Making Sambar Using MTR Sambar Mix - 1 cup of Toor Dal (Split Pigeon Peas) - 1 packet (180gm) of MTR Sambar Mix - 3-4 cups of mixed vegetables (carrots, potatoes, drumstick, eggplant, etc.) - 1 medium-sized onion, finely chopped - 2-3 tomatoes, finely chopped - Tamarind, about the size of a small lemon, soaked in warm water - 2-3 cups of water - 2-3 tablespoons oil or ghee - Salt to taste - Fresh cilantro, chopped (for garnish)
Instructions 1. Cook the Dal: Rinse 1 cup of toor dal thoroughly and pressure cook it with 2-3 cups of water until soft and mushy. If using a pot, cook until the dal is completely soft and can be mashed easily.
Prepare Vegetables: While the dal is cooking, wash, peel, and chop your choice of vegetables. Ideal vegetables for sambar include carrots, potatoes, drumsticks, eggplant, and okra. Chop the onions and tomatoes separately.
Cook the Vegetables: In a large pot, heat oil or ghee. Add the chopped onions and sauté until translucent. Add chopped tomatoes and cook until they soften.
Add the Mix: Add the chopped vegetables to the pot and sauté for a couple of minutes. Then pour in the MTR Sambar Mix and stir well.
Simmer: Add enough water to the pot to cover the vegetables and mix well. Let it come to a boil and then reduce the heat. Cover the pot and let it simmer until the vegetables are tender.
Combine with Dal: Once the vegetables are cooked, add the cooked and mashed toor dal to the pot. Mix well.
Tamarind Pulp: Extract the tamarind pulp by straining the soaked tamarind water. Add this pulp to the sambar according to your taste preference. Cook for another 5-10 minutes, allowing the flavors to meld.
