At the mills, sugarcane undergoes a multi-step process to extract the sucrose, the natural sugar present in the plant. The steps typically involve crushing the stalks, extracting the juice, clarifying it, and evaporating the water content. Sulphur is sometimes used for bleaching, though some brands offer "sulphurless" chini. Finally, the concentrated syrup is crystallized and packaged as the white, granulated sugar we know.
